vanilla spelt cake

CAKE INGREDIENTS:

1 and ¾ C spelt flour

1 C raw sugar

3/4 tsp baking soda

½ tsp salt

1 C almond milk

2 tsp vanilla paste

⅓ cup olive oil

1 Tbsp white vinegar

FROSTING INGREDIENTS:

2 C powdered sugar

Zest from 1.5 limes 

Juice from 2 limes 

2 tsp vanilla paste 

 

PROCEDURE:

Preheat the oven to 350 degrees. 

Sift flour. Add sugar, baking soda, and salt. Mix. 

Add almond milk, vanilla, olive oil, and vinegar. Mix. 

Bake for 30 mins..(should be moist but done all the way through) 

 

For frosting: 

Sift the powdered sugar. Add zest, juice, and vanilla. Whisk together. Texture should be glaze-like, but not too runny.
